If the loading bar turns red, an error occurred loading one of the images and the browser error console (ctrl+shift+j) will have more information. Commonly this is just because you forgot to upload one of the images and does not mean it's a C2 bug. What does the browser console say and can you link us to the uploaded demo that is not working?
There's a setting for the default preview browser in Preferences. That option should be respected for all the templates, does it not use it?
If your game supports both keyboard/mouse and touchscreen input it should "just work".
This looks the same as your demo in another bug report (https://www.scirra.com/forum/ejecta-in-landscape_t118621) which ran just fine for me. There's a bunch of changes and fixes in the next build, please test again with r187 (and the latest version of Ejecta) when it's out and file a new report if anything is still wrong.
Works fine for me with the latest Xcode and OS X Yosemite on an iPhone 4S running iOS 8.1. This is unlikely to be a Construct 2 bug anyway, it's probably related to either Ejecta or just how Xcode works, so closing.
Preview mode does not do any spritesheeting.

Thanks, should be fixed in the next build. The file format change was unintentional, but now C2 accepts either form, so all projects should continue to open just fine from r187+.

Sorry, this is just a (slightly unusual) side effect of spritesheeting. Spritesheeting has too many benefits to turn off for cases like this. As a workaround just use separate sprites instead of different animation frames. Also possibly setting the 'Downscale quality' to 'High' may help (since it forces more padding in the exported spritesheets).

I'm afraid if you can't reproduce it without 3rd party plugins then I must assume it is caused by a 3rd party plugin and therefore not our obligation to support. Sorry, closing - please re-post if you can still reproduce an issue with only official features.
Safari on Windows? That was retired by Apple in May 2012. Closing as won't fix.
