Just a suggestion. Would it be possible to implement an Animation Editor for SpriteFonts? So we can have different frames similar to regular Sprites?
Animation Frame 0: Green Font
Animation Frame 1: Red Font
Animation Frame 2: Blue Font
You can use effects if you just want to color your sprite fonts.
It's better writting the things in some image editor (like paint or photoshop) and save like images and then put in the game each frame one image of the text in the color, and you do what you want then.
