in De-bug mode I'd to have something that tell's me live, When a Variables changes and what the old one was.
You can actually see it changing live if you first find it in debug mode before you start changing it. I guess you mean some sort of log though.

Pause, then Step - allows you to observe everything tick by tick in the debugger. You can add an event to check for a change in a variable's value and use that to set the debug to pause.
